Creamy broccoli soup

500 g fresh broccoli 1 pk medium onion 1 clove garlic 1 tsp butter 2 pk medium potatoes 150 ml cooking cream 1 pk broth to taste salt, nutmeg to taste cheese in casing

Beautifully colourful and creamy smooth soup…

Cut the onion and garlic finely and fry lightly in butter. Cover with water and simmer for a while. Set aside while the broccoli and potatoes are cooked.

I like to cook them separately. Cut the potatoes into cubes and boil them in salted water. Divide the broccoli florets into “florets”, also put them in a pot of salted water and cook until tender.

Drain the cooked potatoes and add them to the onions.Repeat the process with the broccoli, but catch some of the water as we will need it for the soup.

Add 2-3 dcl of the “broccoli water” to the Vegetable Recipes and blend everything until smooth with a stick blender. Return to the plate, add the stock, nutmeg and salt to taste.

Add the cream, I tend to put a little Bambino cheese in the casing if I have it (or grated cheese), let it boil and you have a tasty rich soup ready.

Serve with croutons or a little grated cheese.
