Cottage cheese strudel

250 g plain flour 2 pcs egg yolk 2 tbsp vegetable oil 1,5 dl water 1 pinch salt
Filling:
500 g Classic cottage cheese 2 dl granulated sugar 2 packets vanilla sugar 1 pk yolk raisins

50 g butter 82%

A delicious, sweet pulled curd strudel that is sure to be enjoyed not only by the family, but also by visitors 🙂 And you can make it this easy too. The fillings can be changed according to taste 🙂

This batch makes 2 strudels. Mix flour, salt, egg yolks, oil and lukewarm water in a bowl. Make a semi-soft elastic dough to separate from the bowl. Knead it a little, using a minimum of flour, into a loaf

Divide the dough into two and shape into a loaf and brush both loaves on all sides with melted butter. Keep a little butter to brush on the strudel before baking. Cover and leave to rest for 20-25 minutes.

While the dough is resting, make the filling. I mixed cottage cheese, granulated and vanilla sugar, egg yolk and raisins. But of course everyone can make the filling according to their taste 🙂

After 20 minutes, first flatten the loaf with your hands on baking paper to the size of a plate. Then transfer it to a clean tablecloth and use your hands to gently and slowly stretch the dough from the centre towards you/outwards. Pull the dough into a large, thin circle.

Next, place half of the filling on half of the dough, fold the edges inwards and using the tablecloth, roll the strudel like a strudel. Place the finished strudel on a baking tray with parchment paper, brush with the remaining liquid butter and place in the oven at 180°C for about 30 minutes.
