This cornbread recipe is made with flaxseed meal instead of cornmeal. It is a healthier alternative to traditional cornbread and is just as delicious!
Ingredients:
1 cup flour
1 cup flaxseed meal
1/4 cup sugar
4 tsp baking powder
1 tsp salt
1 egg
1/4 cup oil
1 cup milk
Instructions:
Preheat oven to 400 degrees F.
In a large bowl, mix together all of the dry ingredients.
In a separate bowl, whisk together the egg, oil and milk.
Add the wet ingredients to the dry ingredients and mix until well combined.
Pour the batter into an 8×8 inch baking dish or a muffin tin lined with muffin cups.
Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through.
This cornbread can be served on its own or with a variety of toppings. Try it with honey, jam, or butter. It would also be delicious alongside a bowl of chili or soup
