12 servings 3 spring onions 2 handfuls of baby spinach 400 g of sterilised corn 100 g of cheddar cheese 150 g of cottage cheese 2 pcs. Eggs 150 g of plain flour Oil for frying Sour cream for serving Chilli sauce for serving Coriander for serving Salt ground pepper
Preparation step
1 Finely chop the onions and spinach and place in a bowl. Drain the corn and add it to the bowl with the coarsely grated cheddar cheese, cottage cheese and beaten eggs. Mix well, add the flour and mix again, so that the dough is compact and holds well, adding a little more flour if necessary. Season the mixture well with salt and pepper.

2 Heat a little oil in a frying pan, shape the fritters with a spoon and fry them until golden brown (1-2 minutes on each side). Drain on paper towels and serve with sour cream, a little chilli sauce and fresh coriander.
