Cookie recipe for those who have never baked cookies before

After learning how to make cookies with this recipe you will never go back downstairs to buy them again. For this cookie recipe you only need three ingredients and half an hour of your time.
Ingredients
Flour, 180 g Butter, 120 g Sugar, 60 g Baking soda, 1/4 teaspoon (optional) Vanilla essence, 1 teaspoon (optional)
Step 1
Preheat the oven to 180ºC.

We beat the butter with the sugar until we obtain a completely homogeneous cream-textured mixture.
Step 3
Add the sifted flour and baking soda (which is optional but highly recommended) tablespoon by tablespoon as we mix everything.
Step 4
Make balls and flatten them to shape the cookies about 6 cm wide and 3 mm thick. Put them on parchment paper on a baking sheet.
Step 5
Bake for 12 minutes at 180ºC with heat up and down.
Step 6
Remove the cookies from the oven and let them cool on a wire rack for about 15 minutes.
You can see that making cookies at home is nothing more than putting three ingredients together, shaping and baking. It is very easy, but there are some tricks that will help you to perfect these cookies or modify the recipe to get something different, like homemade chocolate chip cookies.
I tell you the biggest secret of making homemade cookies, maybe you had already noticed, but the proportion of the ingredients is 1-2-3. One part sugar, two parts butter and three parts flour.
Knowing this, imagine that we want to add an ingredient like defatted cocoa powder to make chocolate chip cookies. This would count as flour, so we would have to modify the amounts of sugar and butter to keep the proportion 1-2-3.
I explain it with an example. If we start from the proposed recipe with 60 grams of sugar, 120 g of butter and 180 g of flour, and add 30 grams of cocoa powder, it would be like having 210 g of flour, so we would have to divide by 3 to get the 70 g of sugar we need and multiply these by 2 to get the 140 g of butter that would be needed. And so on with any element that we want to modify.
Another different thing is if we want to add pieces to the dough, such as chocolate chips or dried fruit, which would not alter the proportion, but would go separately.
When preparing this cookie recipe it is better if the sugar is powdered sugar, but not everyone has it at home. To make powdered sugar with the Thermomix we have to grind it one minute at speed 10. If you do not have Thermomix or powdered sugar do not worry, you can use white sugar.
If you do or have powdered sugar what is very interesting is to coat them in it before baking. You put the powdered sugar in a bowl and pass the cookies all over so that it sticks to it, as simple as that, and then you bake them. This gives a very rich outer layer to the cookies.
Very important when making these cookies that you sift the flour correctly, because if not very annoying lumps remain in the dough not very nice when eating them. To do this simply sift the flour through a very fine sieve, this will avoid the problem of lumps in the cookie.
