Oat cake with hazelnuts and fruit

2 cups oatmeal 1 cup hazelnuts (natur) ground Ceylon cinnamon (on the tip of a knife) 2 pcs eggs 2 tbsp hazelnut butter + to spread on the cake 2 pcs apple 3 pcs banana (1pc for garnish) 2 handfuls Canadian blueberries fresh + to garnish 1/2 handful walnuts for garnish coconut fat and coconut flour to spread and dust the cake tin

Healthy oatmeal cake with no added sugar. With fresh fruit and hazelnuts. Mug recipe (mug – volume 2,5 dl).

Prepare the ingredients. Shake the oatmeal. We can grind part of it. Finely chop the hazelnuts in a chopper or grind them. Peel and grate the apples, mash the two peeled bananas with a fork. Reserve one banana and part of the blueberries for garnish.

Mix the dry ingredients (oatmeal, ground or blended hazelnuts and a pinch of cinnamon) together in a bowl and transfer to a whisk.

Add the wet ingredients (whole eggs and hazelnut butter) and beat briefly (about 3 minutes).

Last and on low speed, whisk in the mashed bananas and apples. Stir the blueberries into the finished mixture by hand.

Transfer the batter into a cake tin (24 cm in diameter) greased with coconut fat and dusted with coconut flour, the bottom of which is lined with baking paper. Align the surface with a spatula and bake the cake in an oven preheated to 180 °C.

Bake for about 35-40 minutes, or according to your oven. Check with a skewer.

Let the baked cake cool on a wire rack, then remove from the tin, brush the surface with a thin layer of hazelnut butter and decorate with fruit and nuts. Enjoy!
