Fantastic cream puffs,

700 g plain flour 300 g semi-coarse flour 400 g Heavy cream 1 pk egg yolk 4 dl milk 2 tbsp 8% vinegar 2 tbsp salt 50 g yeast
125 g butter
cornstarch to taste
For the spread
1 egg 1 tbsp white yoghurt 1 tbsp sesame seeds for sprinkling

Delicious, flaky scones, with the fine flavor and smoothness of cream and the mild taste of butter. Such a pastry tastes always and everywhere, and therefore it is suitable simply for any occasion…
From the above ingredients, make a semi-soft dough, which is already separated from the bowl. Knead the finished dough briefly on a floured board into a loaf and leave to rise for 40-45 minutes.
While the dough is rising, prepare everything else you will need. I.e. butter for spreading, starch for cooking, egg and yoghurt for spreading on the pancakes and sesame or other seeds for sprinkling
Roll out the risen dough using the starch and brush with soft butter. Finally, fold the dough in the classic way as for the pagachiki, with one exception, and that is to scrape it a little between folding, so that it leaves a nice puff 🙂 Leave the dough covered for 25 minutes to rise again.
After the time has elapsed, repeat the previous step. That is, we fold the pagáčičky together 2x. For a better idea of the progress you can also watch my video 🙂
When the dough has risen after the second folding, roll it out to a thickness of 1,5-2cm. Using a pastry cutter, cut out the little pagacakes, place them on a baking sheet and leave them covered for another 15 minutes to rise. During this time, preheat the oven to 190°C
Before baking, brush them with egg yolk mixed with yoghurt and decorate with seeds.I used sesame seeds. Bake at 190°C for about 20 minutes. You’d better watch it, as every oven bakes a little differently.
