Green ingredients
4 servings 600 g peeled potatoes 100 g smoked bacon 200 g onions 3 cloves of chopped garlic 0,50 tsp chopped cumin salt ground pepper 100 g plain flour 100 g semi-coarse flour 2 pcs. Eggs 4 tbsp water oil 180 g crackling or 200 g of English bacon 500 g sauerkraut , 1 onion and oil for the salad
Recipe preparation
1 Cut the peeled potatoes into small cubes and boil in salted water until soft. Then drain. 2 Cabbage salad: cut approximately 500 g of cabbage into shorter pieces and place in a bowl. Add one finely chopped onion, drizzle with a little oil, stir and cool.

3 Pasta: Mix the flour in a bowl with a pinch of salt. Add the eggs and water and knead into a thick dough, which you leave to stand for about 15 minutes. In a large saucepan, bring slightly salted water to the boil. Then transfer the dough to an oiled cutting board. Using a fork or knife, cut off pieces of dough and let them fall off the cutting board into the boiling water. Depending on the size, cook the gnocchi for about 15-20 minutes. It’s not enough for them to float to the surface. Drain the cooked gnocchi. 4 In a frying pan, fry the finely chopped smoked bacon (bacon) until golden brown. Add the chopped cumin and garlic towards the end of the cooking. Let it smell together.
TIP: Cooking the onions
5 Add the cooked potatoes and gnocchi to the pan.
