Christmas Mushroom Soup II

Another variant of Christmas soup. Recipe for Christmas mushroom soup, i.e. mushroom soup from dried mushrooms and Vegetable Recipes served with thickened roux.

Ingredients:

2 handfuls of dried mushrooms 200 g bio potatoes about 1.5 l water + water or milk for soaking mushrooms 1 pc organic parsley 1 pc organic onions 1/4 pcs bio celery organic plain flour organic butter organic cream organic cumin salt

Procedure:

We recommend starting with the preparation of the broth. First, soak the dried mushrooms in water (milk) for about 30 minutes after rinsing, then squeeze out the water (milk). Clean and finely chop the Vegetable Recipes. Saute the mushrooms in butter with a pinch of cumin. Add the Vegetable Recipes, which you also fry briefly, and cover the whole mixture with water. Cook until the mushrooms and Vegetable Recipes are soft.

Make a roux with the remaining butter. Heat the butter in a small saucepan over a low heat and gradually add the flour. We recommend making it as thick as you want the soup. Finally, add the cream to the roux and stir everything until the ingredients combine and the mixture thickens.

Then add to the broth and stir everything thoroughly again to combine the ingredients. Finally, season and simmer everything for a while.
