Christmas food
Last Updated on
Beginning your preparations early will take the hassle out of the Christmas rush and make it a very slow and stress-free way to enjoy the festive season. With these tips, Christmas food comes naturally. The article includes recommendations for Christmas wines, not forgetting sauna beer.
Who stresses out about Christmas preparations?
The key to a relaxed Christmas season is to start preparations early. Above all, Christmas is a celebration of slowing down and staying put. There’s time for family, a tree, a sauna and a feast of Christmas food & and that’s how the Christmas season is born. This unique moment in the year should not be ruined in a hurry.
Christmas food is born slowly
The traditional Finnish Christmas feast involves boxes. You can put them in the freezer as soon as the harvest season is over, but the final Christmas boxes should be made during the weekends at the beginning of December or whenever you happen to have some time off. It’s best to freeze the boxes half-finished, so the final cooking takes place on Christmas Eve. This will give the boxes an extra fresh taste for the holidays.
Freeze the boxes according to the instructions below, without baking. If ever it’s worth going organic, it’s time to do so for Christmas food.

Sucked potato dish
There will be no Christmas (at least in southern Finland) if there is no suckled potato dish at Christmas dinner. If any of the Christmas boxes are tasty for my kids, it’s just the right treat.
My friends, sucking on potatoes is not exactly a cheap thing to do. Its success depends on the growing season in the summer and on the quality of the potatoes harvested. The old people didn’t use syrup now, but with today’s high-production vegetables, syrup is a good finishing touch, because a suckling potato dish should be sweet.
Some facts on the subject:
“Imbibition, or sweetening, in a potato dish occurs when the potato’s sugars are broken down into sugars by an enzyme called amylase. Amylase is added to the mashed potato from cereals. Sit is present in cereals in both beta and alpha forms. The optimum temperature for beta-amylase is 62-65 degrees and for alpha-amylase 70-74 degrees.

Even at a lower temperature, sugar will be digested, but it will take longer. That’s why I put a potato dish in a freshly sautéed sauna.

Before Christmas Eve, you should already be preparing the treats that will come with the hat. Everything can be made ready in the cold to wait:

Christmas ham
We sleep in for Christmas; and bake a ham in the morning, because we’re having Christmas dinner in the morning. However, it is often customary to eat earlier, at lunchtime, so frying the ham is a moonlight task.
Rosolli
For Rosolli, it is a good idea to chop and cook the root vegetables on the eve of Christmas Eve. They can be put in a cool soup bowl to wait. Pickles and onions can be mixed in on Christmas Eve.br> – 10 cloves
Christmas is of course not complete without a homemade Christmas scent. Here’s how it’s made:
Bring the water to the boil and add the cloves and cinnamon sticks. Peel the oranges and throw the peel into the water.Boil the juice until half of the water is still hot. Cool and strain the water into a bottle. In the Christmas sauna, the scented water can be diluted to taste. I pour half a litre into two sauna bowls.
The rush of Christmas Eve brings Christmas Day
Everyone has their own traditions on Christmas Eve, of course. In a family with children, the most important thing is to take Santa Claus’ arrival into account. Santa’s visit is an effective interruption to the food baking season, but is of course a special event for children. Our stress-free programme has been arranged so that we take a sauna well in advance and enjoy a fish/appetizer platter on the side. Santa Claus arrives early in the evening and is followed by the Christmas dinner. This way the kids (and adults) stay upbeat and motivated all night long, and no one’s temples get squeezed.
Christmas wines and beers
With hundreds of euros spent on food at Christmas, there’s no point skimping on a few euros on the drinks side. Carefully selected beers and wines will ensure a harmonious enjoyment of the festive season and beyond.
For the sauna, a dark and strong lager beer will taste good
Ayinger Winterbock 4.58€
Aperitifsherry is unbeatable
Dry sherries like amontillado, oloroso and palo cortado are great for an aperitif, they will comfortably raise the water to your tongue.
Merito Amontillado 7,98€ (0,375)
White wine with or without a glass of wine
Christmas hats are a challenge for wine, with a wide range of flavours, lots of salt, acidity and even sweetness depending on the food.It is therefore not worth emphasising the variety of flavours with wine, but rather choosing wines that balance out the different flavours in the food.
Segura Viudas Lavit Brut Nature 9,99€
Laurent-Perrier Brut 43,20€
Anselmann Riesling Classic 10.99€
La Soufrandise Pouilly-Fuissé Vieilles Vignes 21,10€
Christmas red wines are soulful
Dried fruit can be found in the fruit soup served with Christmas porridge. The aromas of fig and plum can be found in my Spanish tempranillo wine. They are perfect as Christmas red wines.
Val de los Frailes Vendemia Seleccionada 12,90€
Marqués de Arienzo Reserva 16,30€
For a slice of Portä
When your tummy is on the clock and the armchair is calling, it’s time to move on to a slightly more springy style of wine. Port wines are the perfect choice for a Christmas dinner digestif. A good port can be bought in the shop for less than ten cents (small bottle). If you happen to find more expensive vintage or Tawny ports in a special selection or even on a ship, there is no need to hesitate. The euros invested in this style of wine will pay for themselves with a tremendous pleasure.
Smith Woodhouse Late Bottled Vintage Port 25,90€ (0,75l)
