Although the good weather is already starting in Spain, there are still rainy afternoons ahead and, between that and the health situation that the country is going through, the upcoming Easter vacations will be very homemade. For this reason and because we will have more time to mess around in the kitchen, we want to make the next few days more bearable with today’s recipe. A very fun preparation to fatten up the kitchen and help you with the little ones: chocolate and coffee cookies, an easy and quick recipe ideal to make with children.

And is that, truth be told, who does not like to watch it rain with a hot coffee and a wonderful tray of cookies? Because it is so, better to have a táper at hand because one of the many good things about this type of elaboration is that you can make a good amount of them and store them in a covered container so they do not dry out. Cookies for those who have never made cookies.

Cookie recipes there are many, but few as quick and easy as today’s. Literally, in less than 30 minutes we have amazing cookies ready to soak in coffee, have for breakfast every day or take to a birthday party. Plus, one hundred percent natural cookies, with no additives or preservatives. Only ingredients that everyone has at home and that, of the best possible quality, do not even have to be a whim. A pure cocoa powder, a high percentage chocolate and the reasonable amount of sugar make it a breakfast or a snack suitable for everyone and for many days.

That’s right, I do not want to say that they are cookies “fitness” or healthy because they are still cookies, but, in their right measure, they are balanced and infinitely superior to any processed products that we can find in supermarkets. Like everything in life, in the middle ground is the virtue.

How to make chocolate and coffee cookies

Ingredients

. Plain wheat flour, 220 g Pure cocoa powder, 20 g Baker’s yeast, 1 teaspoon Baking soda, 1/2 teaspoon Sugar, 160 g Eggs, 1 pc Butter, 125 g Instant coffee, 4 tablespoons Chocolate with chopped hazelnuts, 150 g Salt, a pinch

Step 1

Like all baking done in the oven, the first and almost most important thing is to preheat it to 200 ºC with heat up and down. Along with that, prepare a tray with greaseproof paper to prevent our future cookies from sticking and ruining our wonderful snack. And also leave a rack ready.

Step 2

First, in a bowl, mix all the dry ingredients except the sugar: flour, baking soda, pure cocoa, coffee and pinch of salt. Integrate all the elements well.

Step 3

The second step is, separately, melt the butter in the microwave (for 50 seconds is more than enough, but, yes, always covered and stirring every 20 seconds. (spoiler: it can explode) and mix it with the sugar until you get a homogeneous texture.

Step 4

Now, join the dry ingredients with the sugar and butter mixture. Crack an egg and with the help of the spoon, mix everything well. There will come a time when we can not, will be when we will have to put our hands until everything is well integrated.

Step 5

Cut the ounces of dark chocolate into small squares and reserve 16 pieces (theoretically, with these quantities come out 16 chubby cookies). Add the rest of the chocolate to the mixture and, once unified, start forming the cookies.

Step 6

Take a small ball, give it a round shape and place it on the tray with greaseproof paper. Just above, place the piece of chocolate that we had reserved pressing down a little.

Step 7

Dispose all the cookies on the tray leaving a reasonable separation because they are going to grow (about 5-7cm) and bake at 200 degrees for 10 minutes. Keep an eye on it because all ovens are very different. When they have expanded and opened a little bit they will be deliciously ready.
