Chickpea pancakes gluten-free, egg-free, vegan

Chickpeas are one of our favorite legumes. It contains a lot of protein, fiber and important iron for example. We tried to plant it sprouted in the garden and it grew with three pods. There was only one grain in each of them. It was our 3 yr old daughter’s attempt, the only legume that she didn’t eat anything from, she ate it and it grew back. However, this recipe is not from the “harvest”, I bought chickpea flour on vacation in Italy, but you can also get it in Slovakia. I’ve made chickpea pancakes before, this will also be a treat, something like pancakes. They could even be them if you make them sweet. My friend asked me for a recipe for pancakes without gluten and egg, milk a long time ago. I adapted this one from a recipe for socca pancakes that the flour manufacturer presciently posted on the flour package. It will take you about 90mins in total to prepare. It takes five to make, then it’s a good idea to let the dough sit for an hour and about 10minutes to make the pancakes. I didn’t weigh the ingredients but used the cup technique, in the end, the batter should have a pancake like consistency, you can test for yourself what consistency you are comfortable working with

Mix all the ingredients together in a bowl and leave covered to stand at room temperature for about an hour. Then stir.

The consistency should be like for pancakes, as I wrote above, test it on a hot griddle, the pancakes – “pancakes” should be about 2-3mm thick. Different manufacturers may have different ground thickness and quality. This recipe is so simple that you can quickly adapt it to suit you.

Bake the pancakes in a lightly greased pan, brushing both sides with olive oil after baking. We cut them up, but you can use them filled with cheese, something vegetable, salad , or dipped in avocado dip for example. They tasted great instead of bread with a salad of vegetable salad.

TIP: to change the color, you can use beetroot instead of water, blended until smooth, or apple juice and make them with cinnamon and vanilla for a sweet treat.
