Chicken cutlets in wine batter

500 g chicken breast 4 pcs egg 200 ml white wine 200 ml soda water 8 tbsp plain flour salt ground black pepper herbs

Whisk the eggs well in the wine and start adding the flour a tablespoon at a time until you have a thicker, smooth slurry. Add enough soda or water to make a batter about the size of pancakes, or a little thicker. Season with salt and pepper and add fresh or dried herbs.

Cut the chicken breasts into smaller pieces, add salt and pepper and place in the batter.

Use a spoon to scoop out the dough, place in hot oil and fry on both sides.

Place on a paper towel.

Serve with potatoes and salad, or as a treat for a visitor with just dressing…
