Chicken broth with Vegetable Recipes with homemade noodles and meat dumplings

Recipe by chef Lukáš Holý from the brewery restaurant OSSEGG. Try the chicken broth as prepared in the famous Prague restaurant. You can prepare it at home, or go not only to the OSSEGG restaurant for a great broth.

Recommendation:
After chilling, skim the fat off the broth and you can put the broth in the fridge or you can freeze it in batches. A well-frozen broth will keep in the freezer for several months.
Roast chicken skeletons in the oven to give the broth its color and flavor.
Do not roast skins and trimmings in the oven. The broth may taste bitter.
If you want the broth thicker, simply boil/reduce some of it in the pot. On the other hand, if you need a weaker broth, cut everything into larger pieces. Follow the same procedure.
