Quick and easy recipe for a mug of cherry bubbly. You can use other fruits as well.

Prepare a 250 ml cup.

In a bowl, mix the dry ingredients (sifted flour, baking powder, cane and vanilla sugar).

In another bowl, combine the wet ingredients (whole eggs, oil and milk) and beat with a whisk.

Add the wet mixture to the flour mixture as you progress and mix with a fork to form a smooth dough.

Line the tray with baking paper, brush the paper and sides with butter and sprinkle with flour. Pour the batter on top, spread it evenly and place the washed and pitted cherries on top.

Bake in a preheated oven at 180°C for about 30 minutes. After baking, let the cake cool on a wire rack, then sprinkle with icing sugar and cut.
