Soup of goose (duck or pork) blood with liver, semolina.
Ingredients:
Procedure:
1. Add semolina to the boiling broth in a thin trickle and boil for 5 minutes, stirring frequently
2. Then stir in the soup the pounded or finely scraped liver, previously whisked in 3 tablespoons of cold stock, and simmer for 2 minutes
3. Reheat over low heat, but do not boil, so that the blood does not curdle
5. Season the soup with ground pepper, marjoram, crushed garlic and salt
6. Sprinkle with chopped parsley and serve.
