Cheese Potatoes

Cubes of boiled potatoes coated in batter and fried until golden brown.
Ingredients:

Procedure:
1. Peel the potatoes, cut them into cubes and boil them in salted water until semi-soft, then drain them, let them cool and dust them with plain flour
2. In a large bowl, mix the cream, grated cheese, a pinch of cayenne pepper and carefully stir in the beaten stiff egg white (if the batter is too runny, add a little flour)
3. Coat the potatoes in the creamy batter and fry in a deep fryer until golden brown
4. Serve warm, sprinkled with finely chopped parsley.
