Poca is one of the most common and popular pastries in Turkish cuisine. If you are a leek lover, then you should definitely try this great combination of leeks and cheese in a soft sourdough savoury dough

In a bowl, first mix the flour, salt and sugar. Then add the yeast swollen in 3 dl of milk, oil, egg whites, yoghurt and work into a semi-soft, soft dough, which is already separating from the bowl. Into the cooled leeks, crumble our cheese and mix. I use Turkish cream cheese, or the crumbly cheese in brine But feel free to use Greek cheese, or feta, or even bryndza The combination of leeks and bryndza is really fantastic too!

Roll the risen loaves into a smaller circle, put a generous amount of filling in the middle and close the dough Just lightly press the edges.

Place the cake on a baking sheet with parchment paper and brush with egg yolk mixed with a few drops of water. Sprinkle the top with the chervil (black cumin) and sesame seeds and immediately place in the oven to bake at 190 °C for about 20 minutes. You’ll need to keep an eye on it, as every oven bakes a little differently
