Cauliflower with pasta à la fake “paprikash”

Do you like cauliflower? Are you tired of the classic chicken paprikash? Then try the vegetable version. The recipe is just as easy and tasty.

Wash, clean and tear the cauliflower into smaller florets. Salt the water and boil the cauliflower until tender(it doesn’t have to be completely, as it will still soften when simmered). Meanwhile, chop the onion finely and dissolve the hen broth in hot water.

When the cauliflower is cooked, heat the oil in a large frying pan or wok, add the onions and fry until glassy. Be careful not to burn it.

Add the cauliflower to the onions and cover with the water in which you have dissolved the stock. Season with a little salt, add a pinch of ground black pepper and ground sweet paprika. I give the peppers by eye, about a teaspoon. Stir everything together and let simmer for 10-15 minutes on medium heat. Occasionally cover the pan and stir and add water if it has evaporated a lot.

During the simmering time, cook the pasta. I use rounds or bows, but the choice is up to you. Also, make the dressing. !!!ATTENTION!!! If you use larger cauliflower, it’s quite possible that the sauce will be quite thick and so you may not even need the dressing. !!! Whisk the plain flour with the warm water or juice from the sauce until smooth. When everything is simmered, add the sour cream to the sauce, stir and let simmer for a while. Finally, just add the dressing to thicken the sauce and simmer one last time.

Place the pasta preferably in a deep plate or bowl and layer the sauce on top. Enjoy!
