Cauliflower soup from roasted cauliflower and other Vegetable Recipes

So a little unconventionally prepared cauliflower soup. Cauliflower florets are wrapped in herbs and baked in the oven! This is a recipe inspired by Asian cuisine.

Ingredients:

Rule for several servings: 1 piece of cauliflower 4-5 pieces of kale leaves

4 pcs carrots 2 pcs larger garlic cloves 1 pk larger onion 1.5 l stock 250 ml coconut milk 6 tbsp olive oil 2 tsp curry spices 1/2 tsp crushed dried chillies 1/2 tsp ground Roman cumin 1/2 tsp ground sweet paprika 1 handful of fresh herb leaves 1/4 tsp salt + to finish the finished soup chopped nuts for garnish

Procedure:

Place the rinsed cauliflower, which has been cut into smaller pieces, in a bowl

In a bowl, mix together the cumin seeds with the ground sweet paprika, curry spices, crushed garlic cloves, salt and 3 tablespoons of olive oil, and coat the cauliflower florets in this mixture

Stir the cauliflower florets into the mixture./li>

Distribute the wrapped florets on a baking tray and place in an oven preheated to 200 °C, bake for 15 to 20 minutes, the cauliflower must remain firm!

Clean and finely chop the other Vegetable Recipes, once the cauliflower is out of the oven, blend it, but not into a mash, you should be left with chunky pieces (you can keep a few florets for garnish)

In the remaining oil fry the remaining crushed garlic and finely chopped onion, after 5 minutes pour the broth, milk and add the other Vegetable Recipes, the blended cauliflower, also chopped chillies

Cook on medium heat for 20 minutes, remembering to taste the soup and to add salt if necessary

Decorate individual portions with nuts, herbs, or discarded cauliflower florets.
