Carrot Soup with Ginger

Cream soup made from carrots, onions, potatoes, vegetable broth, ginger and other ingredients.

Procedure:
1. Peel the carrot, onion and potato and cut into cubes, slice the peeled garlic cloves, put everything into boiling vegetable broth, add a little salt and cook slowly covered until tender for about 20 minutes
2. In a frying pan in 2 tablespoons of heated oil fry coarsely grated peeled ginger, a pinch of chilli and spice mixture, pour in lemon juice and simmer for 1 minute, then pour in 1 tablespoon of oil and stir until thickened
3. Then pour the prepared mixture into the soup and blend everything with a stick blender to a smooth puree, season with salt and pepper as needed and serve garnished with parsley.
