Carrot soup

Carrot soup gets a wonderful aroma from Asian ingredients. Ginger, coconut and chilli. The evening will be pleasantly relaxing and your cold may even be cured. (depending on taste and spiciness) 1 tbsp honey 1/2 lime juice 1/2 tsp black pepper 1 tsp salt 1 handful cashew nuts & fresh coriander
Bring 3 dl water and orange juice to the boil in a saucepan. Peel and chop the carrots in the saucepan. Peel and chop the ginger. Add the chillies, honey and lime juice. Season with salt and pepper and place under a lid to simmer in a cool place for 15 minutes.
Melt the cashew chips in a pan. Be careful not to overcook. This happens easily.
When the carrots are soft, blend the soup with a hand blender until smooth.
Add myös coconut milk to the soup. Stir well and bring to the boil. Check the flavour.
Place the carrot soup in the pot and let it simmer for a while.
Garnish the portions with cashew butter, chilli pepper and coriander leaves.
Cook the portions until smooth.
