1. Chop the parsley leaves finely. Separate the egg yolks from the whites and mix them with the melted butter and whip the whites into stiff peaks. 2. Add the butter to the rolls with the egg yolks, chopped parsley and the egg white and mix until smooth. Place some cling film or a wet tea towel on a board, place the dumpling mixture on top, wrap tightly and, if using a tea towel, tie with kitchen twine. 3. Cook the dumplings in salted water for about 25 minutes, unwrap and let stand for a while. Cut the dumplings into slices and serve.
