Light dessert without flour…

Start by separating your 8 eggs into whites and yolks. I add 2 whole eggs to the yolks. I will use a larger bowl. Add a tiny pinch of salt to both mixtures. I preheat the oven to 180°C.

I heat the oven to 180°C.

Into the egg white mixture comes 150 g of sugar and into the yolk mixture comes the rest, so 50 g. Beat first the egg white and then the yolk mixture until I get a rich and thick foam. Also 10 minutes.

Prepare a baking tray, lining it with parchment paper so that the paper extends over all the edges. Use decorating bags. Then I alternately spray both the egg yolk and egg white foam. Put it in a preheated oven and it puffs up beautifully in about 15 minutes (to be sure, test in the usual way to see if you have baked the batter – just toothpick into the yolk part). Later it will spit a little. Leave to cool properly.

Whisk your whipping cream with vanilla sugar and then add the mascarpone, you have your filling ready.

Turn the dough top side down and carefully remove the parchment paper. From the bottom part, I spread 2-3 tablespoons of any jam I like on it. I layer the filling and fold the dough over it. The result is like a tunnel that you slice crosswise.

It can be served immediately. Finally, dust the cake with icing sugar. Enjoy!
