Cantarella sauce

Cantaloupe sauce, or more commonly known as cantaloupe sauce, is a summer treat that everyone is familiar with. The recipe is refined with white wine, which goes perfectly with this dish.
Ingredients. 4 dl
3 dl fresh chanterelles 2 handfuls of parsley (or chives) 2 dl cream 1 dl dry white wine 1 dl vegetarian liqueur 1 tbsp.1 large onion 2 tablespoons butter 1/2 teaspoon white pepper 1/2 teaspoon turmeric 1/2 teaspoon sugar salt
Peel and finely chop the onion. Sauté with butter in a caser until yellow. Then add the chanterelles and fry them to remove the water. Season with pepper.
Add the wine and simmer it down. Add the vegetable stock and bring to the boil. Whip the cantarella sauce with cream and season with sugar and salt (add turmeric or curry powder). Bring to the boil and remove from the pan.
Add the chopped parsley and simmer for a minute. Serve the chanterelle sauce hot.
