Start by washing the butternut squash well, cut it in half and then remove the seeds.

Fry the lardons in a fat-free pan for 5 minutes, then remove from the pan and set aside.
In the same pan fry the chopped garlic and chopped squash flesh for 6 minutes.
Add the cream, lardons, parsley, salt and pepper then stir.
Top the squash halves with the stuffing then arrange the cheese slices.
