Buttermilk Pancakes

Fritters made of yeast dough prepared from buttermilk, butter, yeast and other ingredients, fried until golden brown.

Procedure:
1. Combine the caster sugar and yeast in a bowl, add the lukewarm milk and melted (not hot) butter, stir lightly and set aside for 5 minutes to allow small bubbles to begin to form on the surface
2. In another bowl, mix together the plain flour and salt, then add the yeast mixture, buttermilk and mix until smooth
3. Cover with cling film and leave to rest for 1 hour
4. Finally, dissolve the baking soda in warm water, stir it into the batter and let it rest for another 30 minutes
5. Then, in a frying pan, fry the fritters in melted butter until golden brown on both sides.
