Real burger + homemade bun

463 g plain flour extra special 14 g dried yeast 31 g granulated sugar 9 g salt 41 g butter 220 g lukewarm water (yes it is measured in grams) 1 pk egg
Bacon jam
1 pk larger red onion 5 slices bacon (preferably English) 1 tbsp butter 3 tbsp soy sauce 2 tbsp honey

4 tsp mayonnaise 2 tsp mustard 1/2 pk white onion 2 pk pickle

1 kg ground beef 1 packet cheddar cheese (sliced) 1 packet ground pepper 4 colours

Prepare the dough for the burger buns. Mix all ingredients together. If you are using fresh yeast, use the whole packet (about 30g). Work the dough properly and put it to rise in a warm place preferably in a greased bowl with olive oil and covered with cling film. Let the dough rise for 1 hour.

After an hour, remove the dough to a work surface and knead it again. Divide the dough into 6 parts and shape into a bun shape – using a circular motion with the palm of your hand on the work surface. Place the worked areas on a baking tray with baking paper and leave to rise for another 20 minutes to give them sufficient volume.

After 20 minutes, brush the buns with beaten egg and sprinkle with sesame or poppy seeds. Place in a preheated oven at 180 degrees and bake for 20 minutes. !Careful, one egg goes in the batter and one egg goes on the spread!

While the buns are baking prepare the bacon jam. Put the butter in a pan and fry the bacon and red onion finely chopped.

After a few minutes add the soy sauce and honey. Turn the heat down to low and leave the jam covered to keep the temperature.

The buns are almost ready and we still have time to prepare a simple sauce. Mix mayonnaise, mustard, finely chopped onion and pickles in a bowl.

We bake the buns and let them cool down so they are nice to cut.

Divide the ground beef into 6 parts and shape them into burgers. Make a depression in the center of each meat patty with your thumb so that the meat patty doesn’t pull too much. Season on both sides. !Be careful never to use salt on the meat! This is a big mistake many people make. Salt will unnecessarily dry out the meat!

Place the shaped and seasoned meat burgers on a hot griddle and fry to taste. I personally recommend 3-4 minutes on each side. After the first flip of the meat, place a slice or two of cheddar cheese on top and cover with a lid to melt. Add the sliced buns as well to toast them slightly.

Serve the burgers! Spread the bottom with the prepared sauce, on top of which you can put lettuce or tomato if you like. Place the fried meat and cheddar on top, add the bacon jam and finally cover the top of the buns with the sauce. This burger is inspired by Roxor Burger in Bratislava
