Brussels Chicken Pâté

A tasty appetizer made of ground pork and chicken, bacon, brandy and spices.

1. Cut the breasts off the chicken
2. Grind the rest of the meat, bacon and pork twice in a meat grinder, add ground pepper, ground ginger, brandy, salt and press everything through
3. Line a deeper fireproof dish with bacon slices, add the bay leaf, thyme and half of the prepared mixture, cover with thin slices of chicken breast and bacon slices, spread the other half of the mince mixture over it, cover with bacon slices, press firmly, cover the dish with a lid and bake in a moderately heated oven for 2 hours
5. Cover the baked pâté with a tea towel, cover with a cutting board and bake for 12 hours
6. Finally, pour the melted lard over the pate and serve.
