British cakes are devastatingly delicious and fairly easy to make. Its freshness makes it perfect for a barbecue, for example.
Ingredients for a cake for 12 people
Base
120g butter about a tablespoon of sugar 2 egg yolks 1.5 dl wheat flour 2 teaspoons of baking powder approx. 1.5 dl 2 egg whites 1 teaspoon vanilla sugar handful of almond flakes
Marshmallows
sugar 1.5 dl 2 egg whites 1 teaspoon vanilla sugarTäyte
2dl whipping cream sugar vanilla sugar 1,5 dl curd berries, fresh or frozen, to your taste.
Whip the butter and sugar until fluffy. Add the egg yolks one at a time, beating vigorously. Mix the dry ingredients together and add them to the dough, alternating with the milk. Spread the dough on a baking sheet, on a baking tray.
Whisk the egg whites until stiff and add the sugar, beating slowly. Beat until the foam is glossy and stays in the bowl, even if you turn the bowl upside down. Spread the meringue on top of the previous base batter and sprinkle the almond flakes over the top. Bake at 175°C for about 20-25min.
Make the batter; whip the cream and stir in the curd. Season with sugars. Puree the berries and add to the cream. Check the taste.
Make two discs from the prepared cake base by splitting a baking sheet in half. Put the berry cream on the side of the cake so that it doesn’t stick to the sides. Decorate the Britakakki with berries. Enjoy!
