Bresaola pasta

Bresaola is air-dried beef. In peri-Italian fashion, it makes a great pasta made from a recipe.
Ingredients for four
500g penne pasta (dry weight) 100g bresaola (or air-dried ham) 2 dl cream 50g butter 100g Parmesan cheese salt and pepper parsley for garnish
Bring the pasta to the boil in water seasoned with a generous amount of salt. Remember, the pasta must be crispy.
Mix the cream and butter in a small saucepan. Grate the parmesan cheese into the mixture.
Stir in the bresaola and fry it in a pan for a while to crisp it up.
Thoroughly mix the pasta and stir the parmesan cream into the pasta. Season with pepper and, if necessary, add salt.
Place the portions on plates, top with crispy bresaola and garnish with parsley.
