Fresh peach slices

ingredients

5 pcs egg 220 g fine granulated sugar 5 tbsp vegetable oil 7 tbsp lukewarm water 250 g semi-coarse flour 3/4 packet baking powder 3 tbsp Dutch cocoa

Filling:

500 g soft lump-free cottage cheese 500 ml whipping cream (33%) 30 g gelatine powder 1 packet vanilla sugar 4 tbsp icing sugar 2 packets cream-fix

Gel:

1 litre peach juice (orange) 4 tbsp caster sugar 2 packets golden cob

Curd, fresh peaches from our garden, jelly, a delicious treat for hot summer days.

Cesto: in a bowl, beat egg whites with a pinch of salt, beat in sugar, egg yolks, oil, water, sifted flour mixed with baking powder and cocoa, one spoonful at a time. Bake on a baking sheet with higher edges on baking paper, size 30×40 cm. Temperature 180°C for 20-25 minutes, or as required. Let cool, remove paper.

Filling: In a bowl, mix the cottage cheese with the vanilla and icing sugar. Whip the whipping cream with the Smeta-fix and gently fold into the curd. Pour 100 ml cold water over the gelatine, leave to swell. Then heat it, it must not boil, and dissolve it so that it is liquid. Stirring constantly, pour in the prepared filling and spread it on the cooled cake, removing the skin that has formed during baking. Place in the refrigerator for about an hour.

Wash the peaches, clean them. Cut into thin slices and place close together on top of the filling. Place in the refrigerator again.

Jelly: make a jelly with the juice, sugar and golden cob mixed in some of the juice. Stir for a while so that the jelly is not too hot and spoon over the fruit. /Tang powder drink, one litre of water, sugar can also be used./ Leave in the fridge until completely set. Slice preferably after 12 hours and serve. Enjoy!
