Bread soup with mushrooms and cheese Asiago stravecchio

Italian recipe for traditional bread soup made from broth and bread cubes seasoned with mushrooms and cheese.

Ingredients:

Ingredients (for 4-6 people): 400 g of old bread 200 g hub 1 l of stock extra virgin olive oil butter salt

Procedure:

First, bring the broth to a boil with three tablespoons of olive oil. As the broth begins to boil, add the old bread cut into pieces and stir until a smooth mixture is formed. Leave this to cook for another half hour or so, stirring frequently.

While you are at it, clean the mushrooms, slice them and fry them in a pan in a little oil, season with salt and pepper.

Pour half of the panà bread broth into a baking dish, add the mushrooms and Asiago grated into shavings and pour the remaining half of the broth. Top again with the Asiago cheese shavings. Add a few knobs of butter and put in the oven at 200 degrees for a while.

Serve garnished with a few pieces of mushrooms and a little cheese.
