Braised South Bohemian Short Ribs

Pork ribs filled with sausages and cucumber, fried in lard and then smoked until tender.

Procedure:
1. Cut off the thicker bones of the ribs, cutting through the meat lengthwise to create pockets
2. Place a sausage and part of a cucumber in each pocket, fix the holes with toothpicks or barbecue needles
3. Season the meat with salt and pepper and fry in hot lard on all sides
4. Then dust the juices with flour, fry, cover with hot water or stock and simmer until tender.
Recommendation:
Suitable side dish: Roasted potatoes sprinkled with chopped parsley.
