Braised rabbit legs with sausage

Rabbit hind legs are soft, juicy, not at all dried out, which happens when roasting.
1.
Salt the thighs, cut the sausage into rings and chop the onion into small pieces.

Fry the sausage in the butter, which will let out delicious juices. Therefore, there is no need to use other spices in cooking.

Add the onion and fry.

Add the thighs and turn them over to coat each side.

Pour in water so that the thighs are not all covered, put the veggies in and simmer slowly, covered, for about 2½ hours. Watching that the water doesn’t boil off so that you have juices to baste.

Serve with mashed potatoes. Enjoy.
