Braised cauliflower with cracklings recipe

Ingredients
For 2 servings 1 pc of smaller flowers 1 pc of larger onions 2 cloves of garlic sprig of thyme sprig of thyme 100 g of smoked bacon ground pepper ground salt crushed caraway seeds
Recipe directions
1 Finely chop the bacon and the onions and fry them together until lightly crispy. Add the crushed garlic, a sprig of thyme, cumin crushed to taste, stir and leave to marinate. Stir in the flowers, which have been chopped into smaller pieces, add 3-4 tablespoons of stock or water, season with salt and pepper and simmer, covered, over a low heat, until tender – to taste, checking and stirring occasionally. Usually no stewing is necessary, as the flower cooks quite quickly in the steam and in its own juices.
TIP: Preparing and cooking the cauliflower
2 If you prefer, you can use a fork to chop the cauliflower into slightly smaller pieces, but this is not necessary and you can just leave it with the fork. 3 Serve with fresh, crusty bread and cucumber salad.
