Recipe originally from Armenia for a soup made from diced mutton, peas, onion, apple, tomato puree, potatoes and other ingredients.

Procedure:
1. Take the peas, wash them and soak them overnight in cold water, then boil them until tender
2. Rinse the mutton, cut it into smaller pieces, add salt, put it in a pot and pour water over it, only enough water to cover the meat
3. Cook the mutton pieces on low heat until almost tender, collecting the foam during cooking
4. Meanwhile, peel the onion, potatoes and apples, finely chop the onion, potatoes and apples into smaller pieces
5. Then fry the onion in hot oil until golden brown
6. When the meat is almost tender, add the cooked peas and broth, top up with water as needed to make 1.5 litres of soup, then add the fried onions, chopped potatoes, apples, tomato paste, pepper and cook everything together for 20 minutes
7. After 20 minutes, season the soup with salt, add chopped parsley and serve.
