Black Elderflower Slices

Recipe presented by Lada Hruska on TV screen, who dusted off the old recipe of our grandmothers for bunches of elderflowers dipped in batter, fried until golden brown, served both sweet and savoury.

Ingredients:

8 pcs of elderflowers 2 pcs of egg 1 cup

td>milk (for salty varinata beer) 2 tbsp oil 1 tablespoon honey 1/2 teaspoon kipping powder pinch of salt salt and pepper for a salty varinata

smooth flour to mix the batter paper to line a baking sheet

Procedure:

1. Soak the flowers in cold water for 10 minutes
2. For the eggs, separate the yolks from the whites, whisk the whites until foamy and drizzle with lemon juice
3. Pour a cup of milk into a deep plate, add the egg yolks, 2 tablespoons of oil and a tablespoon of honey, gradually add the flour and stir until a thin, stretchy batter forms, like for pancakes, finally add baking powder and a little salt
4. Soak the whole elderflower bunches in the batter, then place them on a baking tray lined with baking paper
6. Bake in a 170 °C oven for about 30 minutes until golden brown
7. Cut off the stems, roll them in cinnamon and serve immediately while still warm.

For the savoury version:
The procedure is exactly the same, but use a cup of beer instead of milk, replace the honey with, for example, grated garlic and season the cuttings with pepper and salt instead of cinnamon.
