In a bowl, stir together the dry ingredients – flour, sugar, cinnamon, ginger, salt and gingerbread spices
In a larger bowl, whisk together the milk, egg and pumpkin puree.
Then add the solid ingredients to the liquid ingredients and knead into a smooth dough, which you use to bake small pancakes in oil or butter.
Serve with fresh fruit, drizzled with honey or maple syrup.
