Beetroot brownies with white chocolate

500 g larger beetroot cooked and peeled 200 g melted butter 400 g dark chocolate min. 70% 2 pcs egg (L) 150 g sugar (I use cane) 100 g plain flour 200 g semi-coarse flour 1 packet baking powder 3 tbsp 100% cocoa 1 packet cinnamon sugar 1 packet vanilla sugar 200 ml lukewarm milk 50 g White chocolate for decorating

This recipe is baked by my wife whenever she wants to make me happy.
1.
Peel the beetroot and boil it.

Add butter and dark chocolate to the still warm doughnuts. Once melted, blend with an immersion blender with the beetroot until smooth

Beat the eggs and sugar together in a mixer and slowly add the cooled chocolate and beetroot mixture.

Add the sifted flour, baking powder, milk, cinnamon sugar, vanilla sugar and cocoa. Mix everything until smooth.

Fill cupcake tins 3/4 full and bake at 180 degrees for 45 minutes. Once baked, turn out of the moulds and leave to cool.
6.
Decorate with white chocolate. Finished brownies are very juicy and soft thanks to the beetroot.
