Beef stew completely different: With red beans and Shimeji mushrooms

This is an ideal recipe for the slow cooker, but there’s nothing stopping you from making it classically.

Sear the chopped meat on all sides in the onion and place in the slow cooker with the stock. Add the mushrooms, beans, garlic, spices and puree. Cover with water and allow to cook for 4-5 hours at a faster level.

If you are preparing the recipe without the slow cooker, sauté the onion and garlic in oil, add the chopped meat, salt, pepper and let simmer for about 10-15 minutes. Then add the sautéed mushrooms. Add the tomato puree, stock and water and let it cook for at least 45 minutes more. When the meat is tender, add the beans and continue cooking until the meat is completely softened.

Bread is enough as a side dish, baked potatoes are very tasty with this goulash. Dumplings are also suitable, although I do not prefer them, but today is an exception – if desired.

Why Shimei mushrooms? You may have noticed these small mushrooms on longer stems in several of our grocery chains. In Japanese cuisine, they are mainly used in soups, stews, in combination with pasta, rice, salads. They also taste fantastic pickled. They are low in fat and high in fibre. They are an excellent source of protein, zinc, B vitamins and copper.

Why beans? Beans are high in iron, calcium, potassium, vitamin C and B vitamins, but most importantly protein and fibre. Dark, red, brown or black beans have a beneficial effect on the kidneys, green beans cure liver diseases. It is a source of nucleic acids, which are broken down in the intestines into so-called nucleotides (they enter the cells through the blood). They allow cells to renew, regenerate and rejuvenate.
