Beef rolls from Balaton

Beef rolls stuffed with bacon, sausage, peppers and cucumber, stewed on an onion base and served with beer until tender.

Ingredients:

800 g of beef rump (roast) 200 g clubmeat 50 g bacon 2 pcs onions 2 pcs peppers 2 pcs sterilized cucumbers 2 tbsp smooth flour + for coating 250 ml black beer ground hot paprika spicy mustard ground pepper beef broth oil salt

Procedure:

1. Slice the beef across the grain, lightly pat them, salt, pepper, sprinkle with ground hot pepper and rub with spicy mustard
2. Place the bacon strips, sausage, peppers and cucumbers on the slices, twist them, tie them with thread and coat them in plain flour
3. Brown the peeled, finely chopped onions in hot oil, add the rolls and fry them vigorously on all sides
4. Then reduce the heat, pour half of the black beer over everything and simmer under a lid, basting as needed with beef stock
5. Finally, blend the broth, add the flour, top up with the remaining beer and cook the sauce until thickened.

Recommendation:

Serve with boiled potatoes or rice.
