Basic recipe for tortillas

300 g plain flour (ideally T650) 1/2 tsp salt 1/4 tsp baking powder 50 g fat 1/2 cup hot water

Great lunch or dinner.

Mix dry ingredients and fat. Maybe put vegetable or regular butter.

After a while, add hot water to the mixture. Stir until the dough is smooth and not sticky.

Divide the dough into 8 pieces if you want to make quesadillas. If we want to make burritos, divide the dough into 5 pieces, we need them to be bigger and easier to fill.

Using a rolling pin, make patties (as in the photo) and toast them in a dry pan for about 3-4 minutes on each side.

Fill the tortillas to your taste.
BURRITO: Spread lettuce, tomato, cucumber, grilled chicken breast, dressing on tortilla and roll up.
QUESADILLY: Place shredded cheese and grilled chicken between two tortillas, then pan sear on both sides until cheese is melted.
