Banana-nut bread with rhubarb

For dough preparation
90 g wholemeal spelt flour finely ground 35 g coconut flour 125 g oat flour (or ground oatmeal) 1/2 pk vanilla pod pulp 1.5 tsp baking powder with alum cane sugar to taste salt pinch 2 pk eggs 4 tbsp nut butter (cashew, almond…) 2 pcs mashed bananas 1 handful chopped walnuts
For the rhubarb

Prepare the rhubarb. At least 2 hours in advance, wash, peel and cut it into smaller pieces. Sprinkle with cinnamon and cane sugar and refrigerate.

Pesto. Add oat flour or mixed oats, coconut flour, cane sugar, baking powder and mix everything together with a pinch of salt. In a whisking bowl, whisk together the mashed bananas, whole eggs and nut butter. Progressively whisk in the dry mixture until smooth. Finally, stir in the prepared rhubarb and chopped walnuts by hand.

Transfer the dough into a square bread pan lined with baking paper. Bake at 180 °C for about 50 minutes, then reduce the temperature to 170 °C and bake for about 25 minutes more or according to your oven. Check with a skewer.

Let the baked bread cool on a wire rack, then remove with baking paper, slice and eat. Enjoy!
