Baklava – original recipe from Turkey

50 dkg puff pastry or store-bought phyllo dough 18 dkg melted butter grated lemon zest for flavour 60 g liquid honey 2 tbsp ground cinnamon 60 g granulated sugar/brown sugar 1 handful raisins 30 g chopped walnuts 30 g almonds almond chips for garnish
Syrup
9 tbsp honey 350 ml water 350 g granulated sugar 1/2 pk lemon (juice)

We got this recipe when we were on holiday in Turkey and got to know a lady who gave us the recipe, as we really liked it when we first discovered it in their typical shop. We tried baking it at home for the first time at Christmas and everyone loved it. Since then it has become a traditional Christmas recipe in our family. It is suitable for all occasions, we bake it for Christmas, celebrations and get-togethers with friends.

BAKING: Grease a baking dish with butter.

Place a sheet of pastry on the baking tray, evenly scatter a third of the chopped nuts on top and sprinkle with a tablespoon of ground cinnamon. Cover with a second sheet of pastry and sprinkle again with nuts and cinnamon.

Repeat the same process with the third sheet of dough. Finally, cover with the last sheet of pastry. Brush the top with melted butter.

Lightly mark diamonds on the top pastry sheet with a knife (being careful not to cut the sheet completely through).

Place in a preheated oven at 160°C for about 20 minutes until golden brown.

SYRUP.
Immediately after baking the baklava, pour the finished syrup over it to help it soak in better.

Serve the next day.
