Baked zucchini with dressing part 1

2 pcs medium zucchini 1 pcs onion 4 pcs egg pcs breadcrumbs pcs ground black pepper pcs oil pcs salt
Dressing
1 pk sour cream 3 cloves garlic 1 tbsp olive oil pk chives/parsley sprig pk ground black pepper pk salt
Side dish
500 g potatoes pcs parsley pcs salt

When there is a surplus of courgettes in the garden 😉
1. Grate the zucchini on a grater, add salt and let it stand for a while (pour off the water). In a saucepan, fry the finely chopped onion in the oil and add the courgette. Simmer for about 5 minutes and remove from the heat. Let cool and add the eggs, salt and pepper to taste. Stir well and finally add the breadcrumbs about 4PL or more or less. Depends if you want to make bread or baked zucchini 🙂 Pour the whole mixture into a pre-greased baking tray about 1cm thick and bake in the oven at 180°C for 20min (to brown the top a bit). I did it in a gas oven, I had to bake it for about 40min at medium heat. 2. Make the dressing as follows: pour the sour cream into a bowl, add 3 garlic cloves (crushed), salt, olive oil, pepper and chopped chives or parsley. Mix everything together and put in the fridge. 3. As a side dish, boil the potatoes and sprinkle them on the plate with the parsley. For side dish No.2 we can choose a mixed vegetable salad.
