Baked ribs with palm honey, like the Carolina Honey at Tony Roma’s.

The secret to good baked ribs is, without a doubt, that they are tender and their bone comes out almost effortlessly, and that the sauce is one of those lip-smacking ones that invite you to eat more and more. Essentially, these honey baby back ribs couldn’t be simpler to prepare, inspired by the iconic Carolina Honey Baby Back Ribs the sauce only involves a mix of ingredients and the cooking is done only with a pot, express or not, without the need for low temperatures or complicated gadgets.
Ingredients
Pork ribs, 1 u Tomato, 1 u Carrot, 1 u Leek or onion, 1 u Salt, c/s Bay leaf, 1 leaf
For the honey sauce type Carolina Honey
. Ketchup, 6 tablespoons Apple cider vinegar, 2 tablespoons Palm honey, 4 tablespoons Garlic powder, 1/2 teaspoon Tabasco or sriracha-type hot sauce, 1/2 teaspoon Salt, 1/2 teaspoon Onion, 1/4
Step 1
Remove the back webbing from the ribs, which is stiff, so they don’t become tough after cooking. Clean the leek and cut it in two and also cut the tomato and carrot in half.
Step 2
In a pressure cooker with plenty of water place the Vegetable Recipes and the ribs, add salt and cover under pressure, leaving the fire at maximum. When the valve goes up leave cooking at minimum for 30 minutes.
If you do not have an express pot you can do the same process, in a pot with plenty of water and the only change will be that we will let it cook over low heat since it starts to boil for 3-4 hours.
Step 3
While the cooking continues, it will be time to prepare the sauce for the ribs with honey, inspired by the legendary Tony Roma’s sauce. For it in a small saucepan we will put all the ingredients of the same one, with the onion chopped very small and we will take to boil to very soft fire during 5 minutes. Once this time has elapsed, we will strain to remove the onion and keep only the sauce.
Step 4
When the ribs are ready, remove them from the water very carefully because they will be delicate. Let them rest on a plate or tray until they are completely cool, about an hour.
Step 5
Preheat the oven to 180ºC and place the ribs on the baking tray, we recommend a baking paper in between. With the help of a brush or with the hands directly the ribs will have to be smeared completely with the sauce, on both sides. Place in the oven and roast for 10 minutes.
Step 6
Remove the ribs from the oven, baste them again with the sauce on both sides and turn them over. Repeat this process two more times, until the 30 minutes of roasting are complete and they are ready to be enjoyed.
