Baked ham with sweet and sour glaze and cheese

Baked ham pierced with cloves and smeared with glaze, served with homemade cheese made from eggs, milk and other ingredients. Serve this dish for breakfast at Easter, or as part of a cold platter.

Procedure:
1. In a pan, boil maple syrup with cane sugar, port wine, apple juice and water
2. Place the ham in a large baking dish, prick the surface with cloves, brush all sides with the prepared glaze (set aside 5 tablespoons), place in a preheated oven at 180 °C and bake for 90 minutes, 10 minutes before finishing baking brush the ham with the remaining glaze

Preparation of the cheese:
1. Whisk the beaten eggs thoroughly in the milk, add salt, cloves, sugar, a pinch of mace, pour everything into a saucepan and heat slowly, stirring constantly, until lumps begin to separate, then remove from the heat
2. Place a cloth or a thin tea towel over a clean deep saucepan and pour the egg mixture into it, tie the ends with kitchen string, and leave to drip overnight
3. The next day, cut the resulting lump of cheese into thin slices (refrigerate).
