Baked Ham and Cheese Quesadilla Recipe

Turn your “sandwich” game up to a baked quesadilla. This baked ham and cheese quesadilla is the perfect cross between a perfectly cheesy American grilled ham and cheese sandwich and Mexad’s favorite quesadilla. These quesadillas are baked, not fried, so you can go lighter on the oil. You’ll love it for a hot lunch or a soup and sandwich dinner at night.
What You’ll Need
4 large flour tortillas 1/2 cup Monterey Jack cheese (shredded) 8 ounces ham (or smoked turkey, thinly sliced) 1/2 cup tomatoes (chopped) Optional: 2 tablespoons chopped green onions pepper to taste Vegetable oil for brushing the tops
How to Make It
Preheat the oven to 425 F. Season to taste. Lightly spray cookie sheet with vegetable broth. Arrange two tortillas on cookie sheet, then evenly over 1/4 cup cheese. Top the cheese with sliced ham or turkey, chopped tomatoes, green onions, and then 1/4 cup cheese. Sprinkle each with a small amount of pepper, then top each with a second tortilla. Brush tops with vegetable oil and bake in a 425 F oven for about 10 to 12 minutes, until browned. Roll the quesadillas into wedges and serve with mustard or mayonnaise.
