Aubergines with tomatoes and mozzarella in foil

Thin slices of salted and peppered eggplant, tomato slices and Italian mozzarella cheese wrapped in foil and grilled on a skewer.

Procedure:
1. Wash the aubergines and cut them into long thin slices, or into rounds
2. Cut the tomatoes into thin rounds, as well as the mozzarella
3. Thread both Vegetable Recipes onto a skewer that has been soaked in water for an hour and alternate with cheese
4. Finally, season with salt and pepper and wrap in foil
5. Grill or bake in the oven for about 20 – 30 minutes.
